Binga’s Wingas rolls out gluten-free chicken wings

Here’s an interesting little tidbit from one of our local restaurateurs.

Binga’s Wingas in Yarmouth and Binga’s Stadium in Portland unveiled a selection of gluten-free chicken wings (“Wingas”) this past week. Binga’s owner Alec Altman said in a statement the local restaurants have been working on developing the gluten-free selections for quite some time, and they’re finally ready for the curtain raising.

Here’s Altman’s statement on the topic:

We have been testing our gluten-free recipe for over six months. Customer feedback has been phenomenal. In between mouth fulls, they tell us the fried foods are tastier and crispier.

The added complication, according to Binga’s, is that they aimed to make gluten-free wings without simply resorting to frying them bare, sans the typical wheat breading mixture coat. Binga’s developed a corn, rice flour and spice mixture alternative so they could eliminate the gluten without giving up the flavor.

Again, Altman:

That coating binds the sauce to the wings, locks moisture in the meat and makes the wings crispy. Since we make our Tenders ourselves, we were able to serve gluten-free, fresh chicken instead of the frozen product found at most restaurants.
